We want to bring you closer to the catch with full end-to-end transparency from trawler to tray. We really do value supporting local businesses where possible and try to cut down unnecessary food miles.
We use coley as our fish of choice. Coley is a MSC (Marine Steward Council)-certified sustainable fish from the same family as cod and haddock, caught in the North Sea, Skagerrak, West of Scotland and Rockall. Although it’s gaining popularity, it’s still very underrated, we love it. It has a slightly darker flesh tone than cod and has the perfect density to accompany the crispness of our Golden Era beer batter. It’s melt in the mouth stuff I tell yah. We source our seafood from Smith Sagar Limited, a well established family business based on New Smithfield Market, Manchester. They have a fleet of refrigerated vans which ensure the fresh fish always reaches us in tip-top condition.

There’s nothing quite like getting up bright and early to head to wholesale fruit & veg markets. I’m quite partial to bartering and the hustle and bustle of a market is a haven for such chatter.
Our triple cooked chips start life as humble Maris Piper potatoes sourced from various fruit and veg stalls on New Smithfield Market in Manchester.
